Take ordinary banana bread to the next level by making this Chai Spiced Banana Bread! You'll be glad you did, though it won't last too long!
Pre heat the oven to 180°c.
First make a flax egg by mixing the 2 Tbsp of ground flax meal with the 6 Tbsp of warm water. Set aside for 5 minutes.
Mix the dry ingredients into a bowl - the flour, sugar, baking powder, baking soda, cinnamon, clove powder, cardamom, fresh ginger and nutmeg.
Mash the bananas in a bowl and add the oil, vanilla extract, plant based milk and lastly the flax egg. Mix well and then pour this mixture into the dry ingredients until well incorporated.
Then add sultanas if desired, or you could add vegan choc chips to take it to the next level!
Pour the mixture into a greased loaf tin and bake for 45 to 50 minutes, until a skewer comes out clean. Once cooked, cool it on a baking tray for 20 - 30 minutes and then it's ready to eat!
