If you love Tom Yum you're going to love this fried rice! It's so flavourful and delicious!
Heat olive oil in a large fry pan over medium heat. Add the onions, capsicums and zuchinni. Cook for a few minutes.
Add the chopped stalks of the bok choy, tomatoes, pineapple and tofu. Cook for a further 5 minutes or so.
Then add the pre-cooked rice. Stir through over heat until mixed through well.
Meanwhile mix the tom yum paste in a separate bowl with the sesame oil, tamari and 1/4 cup hot water.
Then pour this into the rice, along with the coriander and the leaves of the bok choy. Stir through until all mixed together.
Serve with bean shoots and a drizzle of lemon. Enjoy!
