Artichokes are my new fave thing. Seriously. How good are they!? And they are so versatile! They go really well on Pizza, in pasta, salads and dips! I wonder if an artichoke ice cream would work… I reckon it would (keep your eyes out for that one!). This 5 ingredient Warmed Artichoke Dip is the perfect starter for your next dinner party! 5 ingredients! And one of those is salt, which you can omit if you like.
We have a few other recipes with artichokes on our blog – in fact, one of our very first recipes we posted (which is still one of my faves!), is a Vegan Quesadilla, made with artichokes. We also have an Antipasto Scrambled Tofu that’s a pretty epic breakfast recipe!
The cashews combined with the artichokes in this dip give it a lovely creamy texture. If you want to tone up the spice add a little more paprika and some chilli flakes, perhaps some cayenne too. The flavour of this dip is quite mild. I really wanted to highlight the subtle flavour of the artichokes, but if you want to pack more flavour in, perhaps some roasted garlic or onion (or both!) would give it a nice lift.
Instead of nutritional yeast you could stir through a vegan cheese, which would also work quite well. We sprinkled some extra paprika on top to make it look sexy 😛

Warm your heart and soul with this deliciously creamy and tasty 5 Ingredient Warm Artichoke Dip! Easy to make and share with your friends!
- 1 400g tin of artichokes drained - ends up being 230g of artichokes
- 1/2 cup cashews blended
- pinch of salt
- 1/2 tsp paprika
- 1 Tbsp Nutritional Yeast

Blend the cashews in your food processor first, until they are finely ground.

Then add the rest of the ingredients and blend until well incorporated. It doesn't have to be ultra smooth, but a nice consistency.

Pour into a ramekin and sprinkle with a little extra paprika.

Bake in a pre-heated oven for 25 minutes at 180℃.

Enjoy with crackers, carrot sticks, cucumber, capsicum, or some toasted Turkish bread.
