Biscoff Butter Cookies

Hiiii… wow has it really been that long between blog posts? Over 6 months! 😳 Anyway, I simply HAD to share this vegan Biscoff Butter Cookies recipe, as they are so good!

I made this recipe three times in one week – that’s when you know it’s a good one!

It’s easy to whip up and you’ll have amazing tasting cookies in no time. These ones are also gluten free, which is a bonus. I reckon you could sub out the GF flour for plain flour, but I haven’t tried it yet.

I made these into thumbprint cookies and piped some biscoff creme cheese on top made by Compassion Creamery in Sydney – Sarah, the owner makes amazing vegan cream cheeses! You could also use biscoff piped on top, or just leave them plain, or do a fork print in them for a bit of texture.

Biscoff Butter Cookies

Ingredients
  • 1/2 cup vegan butter (I use nuttelex)
  • 1/4 cup biscoff spread
  • 1/2 cup sugar
  • pinch of salt
  • 1/2 tsp vanilla paste
  • 1 cup gluten free plain flour
  • 1/2 tsp baking soda
Instructions
  1. Cream the butter, biscoff and sugar together and then add the salt, vanilla paste, flour and baking soda.

  2. Roll the mixture into balls and then flatten them on a tray lined with baking paper. (You can do a thumbprint in each one if you wish and later pipe some biscoff in the middle).

  3. Bake in pre-heated oven at 180°C for 14 minutes. Let cool and enjoy!
