We’re house and dog sitting at the moment and Josh decided to make some lunch. It was a challenge, as he was in a kitchen where he didn’t know where everything was and had to make do with the ingredients at hand. Can’t believe he came up with this incredible cheezy vegan pasta! I’ve wanted to attempt a cheezy pasta for a while, and he totally nailed it! So, we’ve decided to call it Josh’s Easy Cheezy Vegan Pasta.
I was so impressed with this dish, that I’ve decided Josh can be head chef from now on, and I’ll take a back seat, lol!
What’s more, the recipe is so simple! Made with just SIX ingredients (not including water), it takes no time at all to make!
We love pasta – who else loves pasta? It’s just such a comforting, nourishing dish, and this one in particular will have you feeling all warm and cosy in no time. Another great winter dish to add to your recipe collection!
If you made too much and save it in a container for the next day, just add a little more rice milk before you heat it up again to make it all creamy, otherwise it tends to glug together.
We topped ours with toasted pine nuts because they taste so good, and just a few sprigs of fresh coriander.
If you want to spice it up a bit, then add some chilli flakes or cayenne pepper. Though it already has a little kick to it because of the white pepper. You could even add some fresh herbs when you add the red onion to give it a little more flavour. Try coriander, thyme, basil or even tarragon would work!

- 250g penne pasta
- 1 cup rice milk
- 1/2 cup water
- 4 Tbsp savoury yeast
- pinch of salt
- generous sprinkling of white pepper
- 2 Tbsp red onion
- 1 tsp flour
- 3 Tbsp hot water
- 1 Tbsp toasted pinenuts (optional)
- 1 Tbsp fresh coriander (optional)

Cook pasta according to instructions on the packet

Drain and put back in the pot

Add rice milk, water, savoury yeast, salt and white pepper. Stir for a few minutes

Mix the 1 tsp of flour in 3 Tbsp of hot water in a seperate cup. Add to the pasta mixture. Stir for a few more minutes until it thickens up. If it is too thick, add more water or rice milk

Add red onion for the last minute or two of cooking and then serve into bowls and top with toasted pine nuts and coriander if desired
