Messy Tree Sandwiches

There’s no way around it – these are MESSY! But yum, and pretty healthy too. I thought it would be a great idea to get kids to eat their greens! That’s why I called them Messy Tree Sandwiches.

We had these for breakfast, but they would make a great lunch or dinner meal too! These Messy Tree Sandwiches take next to no time to make, and they’re so easy to prepare.

Messy Tree Sandwiches

Broccoli really does look like miniature trees, doesn’t it? And, it’s soooo good for you!

We used toasted buns to put the ingredients in – which technically isn’t a sandwich, it’s more like a burger! – But these would be great sandwiched between two slices of toasted bread too!

I used miso in this recipe to give it a nice salty flavour, but you could use a red curry paste or tom yum paste to give a spicier flavour, or even throw a bit of cumin or turmeric in. Or you could omit the miso, or just a sprinkling of black pepper would be nice.

If you don’t like ginger (who doesn’t!!??), then try garlic! I realise coriander isn’t everyones cup of tea – why not try parsley as a substitute, or even baby spinach would be great!

If you don’t have broccoli, then try cauliflower in this recipe – they still look like trees, haha, but the colour will be a bit bland 😉

This recipe would go really nicely with a Pear, Avocado and Rocket Green Smoothie!

Wow your kids (big kids too!) with these Messy Tree Sandwiches! Super nutritious and super tasty, these will be quick and easy go to meal!
Servings: 3 people
Ingredients
  • 1 Tbsp olive oil
  • 1 tsp ginger chopped finely
  • 1/4 red onion sliced
  • 1 cup broccoli chopped into florets
  • 100g medium or hard Tofu chopped into squares
  • Handful of coriander chopped
  • 1 tsp miso paste
  • 2 - 3 Tbsp water
  • 2 bread rolls
Instructions
  1. Heat the olive oil in a fry pan
  2. Add broccoli, ginger, red onion. Fry for a few minutes
  3. Add tofu and cook for a further few minutes
  4. Add miso paste and water in a separate cup and mix until combined, then add to the mixture and stir through
  5. Add coriander and mix through
  6. Serve on toasted buns or toasted bread
