I’ve seen a lot of people making chickpea tuna lately, and I kept thinking jackfruit would make a great texture for a vegan tuna replacement! And yep! Jackfruit tuna is the bomb!

I used the Jackman brand tuna to make this.. it isn’t as white as other jackfruit I’ve used, but it tastes the same, and the colour is actually perfect to make this recipe with! I also added some spring onion, red onion, vegan mayo and vegan fish sauce. If you can’t find fish sauce, then sub with some fresh lime juice and tamari. You can add extra things in this to your taste, perhaps some chilli flakes, or dried dill would work well!

You could use this mixture as a dip, put it through pasta or a pasta bake, in a salad, on crackers, on a sandwich or a toasted sandwich! So many options! The amount below is good for two sandwiches. You could make more and keep it in a sealed container in the fridge, it would keep for a few days at least.

Jackfruit Tuna

This Jackfruit Tuna is easy to make with minimal ingredients! Perfect on sandwiches, on a toastie, in a pasta bake or on crackers!

Ingredients
  • 1 cup jackfruit drained and pat dry
  • 1 tablespoon vegan mayonnaise
  • 1 teaspoon fish sauce
  • salt and pepper to taste
  • 1 spring onion diced
  • 1/2 tablespoon red onion diced finely
Instructions
  1. Cut up jackfruit into small pieces. Put it in a bowl and add the remaining ingredients. Mix well. This is great on fresh sandwiches or toasted sandwiches.
