Congratulations! You’ve stumbled upon this delicious Udon Stir Fry magic recipe! Oh gosh this is something really special to me. I never seem to get tired with the taste that this magical recipe provides and crave it almost daily. It is jam packed full of vegetables, definitely enough to thrive off for your daily nutritional requirements. The preparation time is fairly nice, especially when you can see all the delicious ingredients starting to lay out in front of you on the cutting board creating a beautiful composition. The Udon Stir Fry is so fun to craft. You can really make it your own with a vast amount of vegetables to add. The abundance of flavours come together so well when you cook with plant based ingredients, you really cannot go wrong.

Okay now that we’ve had the small talk, we need to have a more serious discussion. Broccoli. Broccoli is like the king ingredient to Udon Stir Fry Magic, pretty much next to the noodles themselves on the priority list. If it is cooked right, you can get that slight al dente crunch. When you take those bites into this incredible vegetable mixed with the flavours of all that surrounds it, you will be taken on a journey with your taste buds that will lead you to the most vividly beautiful feeling states.

When people talk about hints of flavour, most times we think it is a little bonus taste to experience on the end of a mouthful. With the coconut cream though, this hint of flavour really compliments every ingredient in the bowl. Coconut cream is another ingredient that really pulls everything together. This hint of flavour actually enhances the combination process of all the other flavours coming together.

The Udon Stir Fry was one of my first real successes. Dare I say it helped build my relationship that ever bit more exciting with Katie. Since that day, I’ve pulled off the same magic at least once a week. It has provided us both with good feelings and a full tummy to walk off later 🙂 It is my wish that this recipe will provide you and your loved ones the same feeling states that I have experienced while eating and thinking about this magical meal. 😉

this will provide more than enough daily vegetables in one chomp than anything else!
Servings: 2 people
Ingredients
  • 2 cloves garlic
  • 1/3 teaspoon ginger finely sliced
  • 1/3 white onion finely chopped
  • 4 tablespoons peanut oil
  • 1 broccoli
  • 3 carrots cut into rounds
  • 1/4 white cabbage sliced thinly
  • 1 zucchini chopped up
  • 1/4 eggplant sliced thinly into cubes
  • 4 slices red capsicum chop up into 1cm pieces
  • 2 mushrooms sliced
  • 8 pieces baby corn
  • 1 strand spring onion chopped
  • 2 leaves silverbeet chopped
  • 2 tablespoons coconut cream maybe a 3rd for a cheeky taste test 😉
  • 1 packet udon noodles thick or thin
Instructions
  1. Place the garlic, ginger, white onion and peanut oil into a frying pan on high heat while constantly pushing them around until they start to appear golden
  2. Set the thin udon noodles to boil in water for about four minutes. If you are using the thick udon noodles, separate them into a separate bowl for now.
  3. Add the rest of the prepared vegetables into the frying pan and begin to stir fry for about ten minutes adding in two tablespoons of coconut cream in spread out among the cooking time

  4. Add the thin udon noodles into the stir fry with the broth included. Begin stirring the noodles in and continue to stir fry until the broth has evaporated. If you have used the thick udon noodles, add them in now and stir fry for another five minutes.
  5. Serve into two bowls and enjoy with a cold drink. It will be hot!
