I’ve got to be honest here, I can’t take full credit for making up this recipe, there’s heaps of them around online. And, I made this to enter a competition with Pampas Pastry. You can check out their website here to learn how to cut and make the tree.

Serve this tree with yogurt, custard, ice cream, or whatever you like! Our Festive Cherry Chocolate Ice Cream would pair really well with this! I’ve seen so many combinations of people getting creative with this tree, drizzling with chocolate and sprinkling with nuts or pistachios. We just decorated simply with some icing sugar.

We served ours with some Kingland Natural Yogurt and some extra Bonne Maman Blackberry Jam. We baked until crispy and then dug in. It doesn’t take long to get it made and in the oven.

Ingredients
  • 2 sheets pastry
  • 1/2 cup blackberry jam
  • 1 – 2 tablespoons nuttelex
  • 1 tablespoon raw sugar
Instructions
  1. Pre-heat oven to 180°C (356°F).

  2. Let the sheets thaw a little so they are easier to cut. Cut into a Christmas tree shape. With the remaining pastry cut two star shapes. Spread the blackberry jam on one of the sheets of pastry, and cover the with the other sheet so the jam is in the middle. From the middle of the tree cut about 1cm or larger strips out to the side. (see the photo). Then twist these strips. This can get quite messy, but it looks great once cooked.

  3. Once you have twisted all the strips, brush with melted nuttelex and sprinkle with the raw sugar. Bake in the oven for about 30 minutes or until golden brown on top.

  4. Serve with yogurt, ice cream, custard, or whatever you desire!
