We just moved to Melbourne and it’s bitter cold. The rain had been falling all morning and it just inspired out stomachs toward a warm hearty meal. Our stomachs were rumbling and we needed something quick and easy.
I found some macaroni and had a little light bulb moment. Vegan Mac ‘n’ Cheese! But not just any Vegan Mac ‘n’ Cheese – One Pot Vegan Mac ‘n’ Cheese! (made all in the one pot)
We added just a touch of chilli to this to give it a little zing. You could add a lot more, dependent on your taste – or a lot less!
You could also pack way more veg in if you feel inclined. Maybe throw in some parsley too. That would make a nice addition!
We made a lovely creamy cashew turmeric sauce to put in with the macaroni. Once the pasta was cooked we didn’t even drain it – just added the sauce and it thickened up a treat! Then added the other ingredients, and voila! A delicious lunch or dinner is served. Comforting and delicious!

Feel like something warm, comforting and filling? Try out this One Pot Vegan Mac 'n' Cheese! It's sure to satisfy any cravings!
- 1/2 cup cashews
- 2 Tbsp sesame seeds
- 1 clove garlic
- salt and pepper to taste
- 1/2 tsp turmeric
- 1 - 2 Tbsp savoury yeast
- 1/2 cup of water to blend
- 300g macaroni
- 1 medium zucchini sliced
- 100g cherry tomatoes sliced in half
- pinch of chilli flakes
- big handful of fresh Spinach rinsed
- parsley
- 1/4 cup vegan cheese grated optional

Blend all ingredients in a magic bullet or nutri bullet until mixed well. You can do this while the pasta is cooking

Cook the macaroni in boiling water until al dente. Don't bother draining the water, just add the Cashew Turmeric Sauce and the zucchini, cherry tomatoes. With the water and the sauce it will thicken up nicely. Add the Vegan cheese at this stage, if using. Stir through for a few minutes or until zucchini has softened. Then stir the spinach through and turn off the heat. Top with parsley and enjoy!!
