Feel like something warm, comforting and filling? Try out this One Pot Vegan Mac 'n' Cheese! It's sure to satisfy any cravings! 

Servings: 2 people
Ingredients
For the Cashew Turmeric Sauce
  • 1/2 cup cashews
  • 2 Tbsp sesame seeds
  • 1 clove garlic
  • salt and pepper to taste
  • 1/2 tsp turmeric
  • 1 - 2 Tbsp savoury yeast
  • 1/2 cup of water to blend
For the Pasta:
  • 300g macaroni
  • 1 medium zucchini sliced
  • 100g cherry tomatoes sliced in half
  • pinch of chilli flakes
  • big handful of fresh Spinach rinsed
  • parsley
  • 1/4 cup vegan cheese grated optional
Instructions
For the Cashew Turmeric Sauce
  1. Blend all ingredients in a magic bullet or nutri bullet until mixed well. You can do this while the pasta is cooking

For the Pasta:
  1. Cook the macaroni in boiling water until al dente. Don't bother draining the water, just add the Cashew Turmeric Sauce and the zucchini, cherry tomatoes. With the water and the sauce it will thicken up nicely. Add the Vegan cheese at this stage, if using. Stir through for a few minutes or until zucchini has softened. Then stir the spinach through and turn off the heat. Top with parsley and enjoy!!
