Make these quick and easy Peanut Coconut Cookies to take as a snack to school or work. Tasty and delicious, with a great nutty flavour!
Pre heat the oven to 180℃
Mix the flour, coconut sugar, salt, coconut and peanuts in a bowl.
Melt the nuttelex with the rice malt syrup in a small saucepan. Once all melted take off the heat and stir in the bi carb quickly. Then pour this mixture into the dry mixture and mix well to form a dough. If you need more liquid then add the milk 1 tablespoon at a time.
Form the cookies into round balls and place on a lined baking tray. Then press them down into cookie shapes.
Bake for 12 - 14 minutes and let cool on a cooling rack. Once cookies are completely cool they are ready to eat!
