Pre-heat the oven to 180°C
Wash the potatoes and pierce each one 4 or 5 times with a fork. Bake the potatoes whole for 1 hour. Meanwhile prepare the remaining ingredients.
Once the potatos are baked, use a potato masher to smash them. In order to do this, press down hard on the potato until it looks smashed. Season with salt and pepper as desired, add the additional ingredients and lastly the vegan cheese. Bake for an additional 10 minutes, careful not to let the cheese burn.
Serve warm with a vegan sour cream or dressing of your choice. Enjoy! If you don't eat them all at once, they can be re-heated later in the oven or air fryer.
