Vegan Green Papaya Salad

Ingredients
For the Salad:
  • 2 medium carrots peeled and grated
  • 1 small cucumber grated
  • 1/4 green papaya peeled and grated
  • 1/4 red capsicum finely sliced
  • 1 tomato diced
  • 1/2 teaspoon ginger grated
  • 1/2 small chilli chopped finely
  • 1 cup beanshoots
  • Small handful of coriander chopped
  • 1/4 cup crushed peanuts
For the Dressing:
  • 1 tbsp fresh lime juice
  • 1 teaspoon fish sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon tamari
  • 1 teaspoon caster sugar
Instructions
  1. Add all the ingredients for the salad into a large salad bowl. Mix well.

  2. Mix the dressing in a separate container or jar. Stir until well combined. Pour the dressing over the salad and mix through well. Enjoy.
