Cinnamon Sugar Butter Cookies

Is there anything better than fresh cookies? These Cinnamon Sugar Butter Cookies are so good, they just melt in your mouth and remind me of my Grandmas cookies she used to bake.

I used The Vegan Dairy Butter for these cookies, which is delicious! (literally lasted two days in our house!!), but I have also baked them with another type of butter, which also worked, but the cookies were flatter. They still tasted the yum though!

This cookie recipe is easy to throw together and you could have freshly baked cookies in less than half an hour!

Melt in your mouth cookies are one of the best things in life!

Ingredients
  • 1/2 cup vegan dairy butter
  • 1/2 cup raw sugar
  • 1 teaspoon vanilla extract
  • 1 cup plain flour
  • 1 teaspoon bi carb soda
  • 1/2 – 1 teaspoon cinnamon
  • Pinch of salt
  • 1 Tbsp plant based milk (I used soy)
Instructions
  1. Pre-heat oven to 190°C (374°F)

  2. Cream the butter and sugar in a standing mixer or with a hand mixer. Then add the vanilla extract. In a seperate bowl mix the flour, bi carb, cinnamon and salt and add that to the standing mixer, until all mixed through. If needed add the tablespoon of plant based milk.

  3. Line a baking tray with baking paper. Roll the mixture into balls that about an inch in diameter. Place a few inches apart on the tray. Bake for 12 – 14 minutes until browned slightly around the edges. Let cool on a cooling rack. Enjoy!
