I love cherry season!! I bought a punnet on special yesterday and decided to make this easy, delicious salad as part of our dinner last night.
I used fresh, homegrown heirloom tomatoes form my garden! I’ve just been away for 3 weeks and lots of them had ripened ready for my return!
This salad would be perfect as part of your Christmas table, it is so festive, with the cherries and mint. If you don’t have mint, try basil, that would work just as well.
I used the My Life Bio marinated feta for this – vegan feta is so easy to find in the shops these days, but if you fancy making your own you could try this Macadamia Feta recipe.
I topped this with some balsamic glaze and some toasted seeds from Pimp My Salad to give it a great crunch. If you’re unable to get those I reckon just toast up some seeds or nuts, let them cool and then sprinkle on top.

- 1 cup cherries pitted
- 1 cup heirloom tomatoes sliced in half
- Handful of fresh mint
- 1/4 cup vegan feta chopped
- Sprinkle of black pepper
- Drizzle of balsamic glaze
- 1 tablespoon toasted nuts/seeds

Firstly pit the cherries and add them to the salad bowl or plate. Then add the heirloom tomatoes, mint, vegan feta (I also like to use a bit of the oil in the feta jar to drizzle over the salad), then sprinkle with black pepper. Drizzle with balsamic glaze and toasted nuts/seeds. Enjoy!
