Avocados are so cheap in Australia right now, it would be rude not to make a Creamy Avocado Pasta!!

This makes A LOT! At least enough for 4 meals. We had it leftover and the next day I heated it in a pan, added a splash more vegan milk and I reckon it was even better.

This recipe is also pretty versatile! You could sub the tofu for soaked cashews, you could add a liquid stock instead of milk or the water. You could add herbs if you want or cooked onion or garlic to give it a bit more of a flavour kick. You could add spices, like curry powder or turmeric.

When avos are cheap, make this creamy avo pasta, so satisfying and creamy!

Servings: 4 people
Ingredients
  • 1 1/2 avocados
  • juice of half a lemon
  • 1/4 cup hemp seeds
  • Generous sprinkle of salt and pepper
  • 1 tablespoon vegan chicken stock powder (I use massel)
  • 1 cup vegan milk (I use oat milk)
  • 2 tablespoons nutritional yeast
  • 140g semi firm or silken tofu
  • 1/4 cup water
  • Dash of soy sauce
  • 1 packet of fettucine pasta
  • 1/4 cup veef bacon bits, cooked (optional)
Instructions
  1. First of all, start cooking the pasta as per packet instructions.

  2. Then in a blender add the avocados, lemon juic, hemp seeds, salt, pepper, stock powder, vegan milk, nutritional yeast, tofu, water and soy sauce. Blend it up, and adjust seasonings to taste.

  3. Once the pasta is cooked drain it and put it back in the saucepan. Then pour the avocado mix over and stir through until well incorporated. Then add the cooked veef bacon bits, if desired. Enjoy!
