Golden Kiwi and Elderflower Mousse

I made aquafaba mousse! Aquafaba is the brine from a can of chickpeas – you can also use the brine from other beans, like cannellini beans.

I wanted to steer clear of the regular chocolate aqaufaba mousse, as I’m kind of allergic to chocolate (I’m totally in denial about it!). Anyway, we got gifted some beautiful Elderflower drink from our friends in Norway and wanted to make something yummy. Also I’m obsessed with Golden Kiwi’s at the moment – they are less bitter than the green ones and just delicious. So here’s our Golden Kiwi and Elderflower Mousse.

You could totally use normal green kiwis for this mousse as well. Or you could try it with another fruit – blueberries, raspberries, strawberries, mangoes – the list is endless!

This was a little too sweet for my tastes – if you aren’t a massive sweet tooth then I’d half the sugar, or even quarter it.

You can make this recipe a day before – it will keep in the fridge for 3 to 4 days.

Cooking with aquafaba is easy! Why waste the chickpea water when you can make a delicious dessert like this Golden Kiwi and Elderflower Mousse!

Servings: 6 people
Ingredients
  • 1 brine from can of cannelini beans
  • 1/4 - 1/2 cup castor sugar
  • 2 golden kiwis chopped
  • 2 Tbsp elderflower
  • 1/2 tsp agar
  • 1/4 cup hot water
  • 2 extra golden kiwis chopped (for decoration)
Instructions
  1. In a standing mixer with the whisk attachment, whisk the aquafaba until soft peaks form. Then add the sugar while still whisking until the mixture has stiff peaks. (I found this mixture quite sweet - next time I will half or even quarter the sugar - so you might want to do this)

  2. Blend the 2 golden kiwis and elderflower in a small blender. In a small saucepan add the 1/4 cup of hot water and 1/2 tsp of agar and stir until dissolved. Bring to the boil and then add the blended golden kiwis and elderflower. Simmer for about 5 minutes. Then take off the heat and slowly fold this mixture into the aquafaba mixture.
  3. Dice the remaining 2 kiwis and put a tablespoon or two into the bottom of clean jars. Then spoon the aquafaba mixture on top and fill up the jars. It will make 4 to 6 jars, depending how big your jars are - there tends to be a lot of the aquafaba mixture, so it might even make more jars (in which case you might want to cut up more kiwis or other fruit to put in the bottom of the jars). Store this mixture in the fridge to set for an hour or more.  
  4. Decorate with more golden kiwis or other fruit as desired. Will keep in the fridge for 3-4 days.
