I’ve been going through all my old recipes lately and I found this recipe for Pepita, Date and Spirulina Balls. I don’t remember making them, but with only FOUR ingredients, I thought I have to give them another go! They worked out perfectly!

I’ve been snacking on these at work – they’re super healthy, and a great snack when you’re craving something a little less healthy (in my case – chocolate!). I really feel that they help with the chocolate cravings too!

Pepita, Date and Spirulina Balls

I soak the pepitas before using them to activate the enzymes in the seeds. This helps you digest them easier, and essentially you are then eating a living food. I use medjool dates in this recipe, because they are soft and caramel-like and they require no pre-soaking. If you use regular dates you may have to soak them for up to 30 minutes before you make this recipe.  Pepita, Date and Spirulina BallsSpirulina is one amazing super food! I’m not sure I liked the taste when I first tried it, but it definitely grows on you. It’s a great source of protein and has Vitamins A, K1, K2, B12, iron and manganese! Pepita, Date and Spirulina Balls

Help your chocolate cravings and get healthy by making the FOUR ingredient Pepita, Date and Spirulina Balls! Your body and mind will love you for it!

Servings: 12 balls
Ingredients
  • 1 cup pepitas soaked for 6 hours or overnight
  • 1/2 cup medjool dates pitted
  • 1/2 cup shredded coconut
  • 1/2 Tbsp Spirulina powder
Instructions
  1. Drain the pepitas well. Then add to a food processor and whizz for a few minutes until crumbly. Then add the dates and whizz till well incorporated. Then add the coconut and do the same. Lastly add the Spirulina and blend until that is well incorporated. Form into balls and store in the fridge. Makes about 12 balls.
